Rich Chocolate Banana Cake

Weekend lagi deh...
Ngga berasa sudah hari Jumat..., hari ini hari terakhir anak2 ujian semester.
Biasanya kalo weekend ada aja yg mesti dibuat untuk snack anak2, entah itu yg rasanya manis ataupun yang asin.

Sudah lama pengin mencoba resep yang ada di sini.., memang pasangan yg pas kalau cokelat dan pisang kalau dijadikan makanan kecil.
Disini aku tidak mengikut semua takaran yg ada karena hasil akhirnya akan lebih keras seperti bolu kelihatannya.
Untuk mendapatkan tekstur yang lebih ringan, aku mengurangi jumlah gula mosvocado dan tepung terigu.

Ingridients :
  • 100 grams bittersweet chocolate, coarsley chopped and melted
  • 2 pc large ripe banana, mashed
  • 150 grams butter softened
  • 170 grams mosvocado sugar ( aku pake 150 gram)
  • 3 eggs
  • 175 grams all purpose flour (aku pake 1oo gram)
  • 1 1/2tsp baking powder ( aku pake yg aluminium free)
  • 20 grams cocoa powder (aku pake 2 tsp)

Directions :

  • Panaskan oven hingga 180 derajat celcius.
  • Siapkan 3 loyang loaf ukuran kecil, oles dengan butter.
  • Dalam wadah bersih, dengan kecepatan tinggi kocok mentega dan gula mosvocado hingga putih dan mengembang.
  • Masukan telur satu persatu, aduk hingga rata.
  • Masukan tepung terigu, coklat bubuk dan baking powder yang sudah di saring, aduk rata dengan spatula.
  • Masukan cokelat yg sudah dilelehkan, aduk rata.
  • Terakhir masukan pisang yg sudah dihancurkan, aduk rata.
  • Bagi ke dalam tiap loyang loaf sama rata, panggang selama kurang lebih 30 - 45 menit.
  • Dinginkan dan potong untuk disajikan.

Notes:

Di saat cuaca panas cobalah sajikan bersama vanilla ice cream dan coklat leleh..

Di saat cuaca dingin sajikan hangat2 dengan segelas susu panas...

Moist Triple Chocolate Cake



To celebrate my daughter birthday, I can't do her request to make Princess Barbie Cake.

The humidity is high about 90 percent, I can't decorate the cake using fondant but I promise her to make something I think she will love it very much.

This recipe I found here. Thank you to Lydia who share this recipe, the cake and the pictures are fabulous.

For this recipe, I made some changing here to adapt the kids health so I don't use instant coffee and adding good quality dark chocolate.


Ingredients :
  1. 100 grams caster sugar
  2. 4 small eggs yolk, 2 egg whites
  3. 140 grams all purpose flour (shift together with baking powder)
  4. 1/2 teaspoon baking powder
  5. 125 grams butter ( melt it together with dark chocolate)
  6. 50 grams dark chocolate (70 percent)
  7. 1 teaspoon cocoa powder
  • Grease the base of 24cm loose bottomed tin, line with baking parchment then grease one more time base and sides, coat with 1 teaspoon cocoa powder both base and sides then tip out any excess.

  • In medium bowl using electric mixer, mix caster sugar and eggs until fluffy and pale,

  • add flour, divide into 2 steps,

  • finally add melted buter and chocolate, mix well,

  • bake with preheated oven using 18o degree C about 30 minutes, let it cool.

Chocolate Paste :
  1. 1/4 cup cocoa powder
  2. 1/4 cup caster sugar
  3. 1/4 cup fresh milk
  4. 100 ml hot water
  • In medium bowl, put 1, 2, mix well, add , 3 and 4, mix well untill all combine, set aside.

Chocolate Ganache :

  1. 100 grams dark chocolate (70 percent)
  2. 20 grams unsalted butter
  • Melt the chocolate and butter in a bowl over a pan of hot water, remove from heat, stir until all melted and smooth, let it warm.

  • Decorate the chocolate cake with ganache, starting from top then to side, use all remaining chocolate to cover top and sides.
Tips :

Serve chocolate cake with a scoop of vanilla/chocolate ice cream.

Banana Cake (cupcakes)

This cake very moist and yummy.... a perfect match with a cup of tea

Ingredients :
  • 125 gram butter
  • 120 gram caster sugar
  • 2 eggs
  • 2 large mashed ripe banana
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 200 gram flour
  • 2 tablespoon fresh milk

Directions :

  1. Beat butter and sugar until light and fluffy,
  2. add eggs one at a time,
  3. put in mashed banana, mix well,
  4. add in (shift flour, baking soda and baking powder),
  5. lastly pour in milk,
  6. using 20 cm ring pan bake for about 40 minutes on 180c
  7. or using 18 standard size cupcakes liners, just pour about 2/3 batter, bake for 20 minutes.
