Homemade Egg Noodle



After many times trial of making egg noodle, here is the recipe that suitable for me.
Before I made the noodle, I already cooked some dishes that can be eat together with the noodles.
I prepared some boil bok choy ( chinesse cabbage), fish cake, mushroom and minced chicken soy sauce.
This homemade egg noodle is very easy and healthy, the ingredients are simple and we can make it anytime we want.
Last time I made this noodle with my kids, who help me put the batter into the pasta machine and cut it into stripe as they like.

Ingredients :
500 grams high protein flour (here I use Cakra brand)
1 tsp salt
1 tbsp tapioka starch
1 tsp baking powder
3 whole eggs
90 ml water


In Bahasa Indonesia :
500 gram tepung Cakra
1 sendok teh garam halus
1 sendok makan tepung tapioka/sagu
3 butir telur ayam
90 ml air

  

Directions :

I just put all ingredients into my food processor and let it blend until the batter stick together.
Bring out the batter, put on the clean table that already sprinkle with some flour, then knead and divide into 3.

Then I flat the batter using the pasta machine, start from the biggest number than down to number 2 or depend how thick you want your noodle.
After we got the flat batter, we cut it using the pasta machine as we desire the thickness.

Here I cut the flat batter into 2 kinds. 


To serve this noodle, we get about 200 grams noodle, put into the boiling water, let it cook until the noodle just tender, don't over cooked. Then take out the noodle without water, put into the bowl that already add some fried garlic oil, fish sauce, pepper and vinegar then mix them well.
Then garnish with minced pork, fish cake/fish ball, boiled bok choy and sprinkle with some spring onion.


In Bahasa Indonesia :


Gunakan food processor untuk mencampur dan mengaduk semua bahan agar pekerjaan lebih mudah. Kalo tidak punya bisa dilakukan dengan manual.
Jika menggunakan food processor, masukan semua bahan2 lalu aduk hingga rata, taruh diatas meja bersih yg ditaburi tepung terigu. Uleni hingga kalis lalu bagi menjadi 3 bagian.


Siapkan mesin pasta, mulai dengan bagian untuk menipiskan adonan, gunakan setelan no yg paling besar (misal no 7), tipiskan adonan hingga adonan menyatu, lalu ganti setelan ke no 5, tipiskan lagi, dan terakhir tipiskan adonan dengan setelan no. 2.
Lalu kita potong2 lembaran adonan yg sudah ditipiskan tadi sesuai dengan selera potongan yg kita inginkan.

Non Bake Bread

Fried Bread with grated cheese


Is it  possible to make bread without oven?
Off course!, we can fried it.
This is another way to make bread without oven.
I love the texture of the bread, it still soft even it's already stand for a night.

The Ingredients we need :
  1. 250 grams wheat flour (here I used Cakra brand)
  2. 4 tbsp granulated sugar
  3. 8 grams dry instant yeast
  4. 125 ml warm milk
  5. 2 egg yolks
  6. 40 grams unsalted butter
Directions:
  1. In clean bowl, mix dry yeast and warm milk, set aside.
  2. Here I use my handy food processor to mix all the ingredients, I put in the wheat flour, sugar, egg yolks and unsalted butter then mix it for few second then I pour the milk little at a time while mixing until the milk finish.
  3. Keep mixing until the batter stick together.
  4. Take out the batter, put into clean bowl, cover with clean damp colth let it rest for 1 hour or double size.
  5. After one hour punch the batter let the air out then scale each into 30 grams, and choose your filling.
  6. After you put your filling let it stand on the tray that already lined with baking paper. Leave it for  more 10 minutes and fry it.

Here I made 3 kinds of fried bread.

First is Sausage Bread, first I cut the sausage into 2 then I cover it with the batter that I already rolled and flatten into long shape and let it stand for 10 minutes on the tray that already lined with baking paper then fry  it.

Second is Beef Floss Bread. You can fill with your favourite filling like tuna, chocolate, cheese, etc. You just make flat the batter and fill it with beef floss. Let it stand for 10 minutes, then fry.

Third is Cheese Bread. I fried the bread without filling then dip it into melted butter and  sprinkle with grated cheese.

When already cool, keep them in the airtight container before served.

My first fondant cake


Here I want to share my first fondant cake, made for Ms. C birthday as my kid request.

It's a 15 cm of 2 layer steamed brownies cake with chocolate ganache filling and frosting. Then covered with white fondant and decorated with rose fondant made by myself.

Sweet Corn with Cheese


For kids who don't like corn, I think it's a good snack recipe to try.

We need :
  1. Steamer
  2. 3 cobs fresh sweet corn
  3. 2 tablespoon salted butter
  4. 1 tablespoon sweet condensed milk
  5. grated cheddar cheese


How to:
  • Heat up your steamer with enough water, wait for water to boil.
  • Use a sharp knife to remove kernels of the corn from the cob.
  • Put the kernels into steamer, steam for 8 -10 minutes.
  • Put cooked kernels into medium size bowl.
  • Add salted butter and sweet condensed milk, mix well.
  • Serve with grated cheddar cheese. (optional)


Note :
Serve when still hot.

Kitty's Land Cafe and Shop

Acctually it's not close with my house but it's still in Tangerang area.

Radish Cake (蘿蔔糕)


  

Anybody knows about Radish Cake?, we never forget to put this dim sum into the list when we yum cha. I love the crunchy layer on the ouside from frying and soft on the inside.

Radish cake is one of the the famous dish in Chinese New Year Festival.
For instance radish cake can slice into square pieces when cooled then pan-fried both side until golden and served with chilli sauce, hoisin sauce and or oyester sauce.

I found this recipe when walking around to this blog Best recipes, food and travel.  After first trial for me the batter is little bit hard, so on the second trial I add some ingridients and change the amount of the rice flour and water and also the method of cooking.

The Ingredients :
  1.  500 grams of white radish,skinned and grated, cook until soft.
  2. 3 tablespoon dried shrimp, fried without oil until fragrant then pound roughly.
  3. 1 pc of chinese sausage (lap chiong), cunt into small cubes, fried without oil until fragrant. 
  4. 3pcs Shitake mushroom, cut into small cubes, fried without oil until fragrant. 
  5. 210 grams rice flor, 50 grams tapioka flour, mix and sieve together.
  6. 500 ml cool drink water.
  7. Salt, sugar, white pepper for seasoning.
  8. 2 tablespoon spring onion, cut into small pieces.
  9. 1 tablespoon white sesame seed.
        
Directions :
  1. In clean medium size bowl, put all the flour then  add water mix until well combine.
  2. Add cooked radish, dried shrimp, chinese sausage, shitake mushroom and seasoning, mix well.
  3. Then pour into medium size non stick cooking pan, cook until the batter thicken (half cooked).
  4. Prepare your steamer, add enough water, then put the half cooked batter into 20cm diameter baking pan, springkle with spirng onion and sesame seeds, steam for about 30 -45 minutes.
  5. Take out the pan let it cool,
  6. Cut into square pieces then pan-fried both side before serve.

Note :

For friends who don't eat chinese sausages (contains pork), you can change it with chicken sausages.

Indonesian Style Buttered Chicken



Taraa....here my first posting after 6 month I moved back to my hometown....Indonesia.
We are enjoyed our new life here, new environment, new friends, and new school for the kids, thanks to my family who always support me.

Here I'm gonna introduced the most popular dishes that we can found in every restaurant's, we usually called them Ayam Goreng Mentega. 
It's my first attempt to cook this dish...well not bad ...the one thing that I love of this dish is the smell at the end....

The  Ingredients :
1kg chicken tights,cut into 2
4 tablespoon margarine (salted)
3 gloves garlic, mashed
3 tablespoon light soysauce
3 tablepsoon english sauce (or worcestershire sauce Lea&Perrins)
3 tablespoon sweet sauce
salt
2 pc kaffir lime juice


Marinade :
2 teaspoon ground fresh ginger
4 gloves ground garlic
1/2 teaspoon salt
1/2 teaspoon white pepper


Directions :
  1. Mix chicken with marinade, leave for 30 minutes,
  2. Fried the chicken until golden brown but not too dry,
  3. In the frying pan , melt the margarine, add garlic, cook until the smell come out,
  4. Then add all of 3 kinds sauce, let it cook until thicken,
  5. Add chicken, mix well,
  6. Then pour the kaffir lime juice, mix well
  7. Serve when still hot.
